ABOUT THIS CLASS
This is one of Audra's favourite Singaporean dishes, a dish that most Singaporeans have a soft spot for. The perfect laksa is made with the blending of beautiful fresh aromats, ground spices and lots of fragrant coconut milk. The skill is in the separation of the coconut milk which gives it it’s lightness. This class will teach you how to perfect your beautifully delicious bowl of laksa. You will also learn the versatility of the laksa paste for several other dishes including making a sambal as a condiment, a spiced coconut broth vegetable stew and more.
This class features many recipes in Audra's cookbook “My Kitchen, Your Table” and breaks down the skills and versatility of the humble laksa paste. We kick off the class with a quick starter - Poached chicken wontons with a black vinegar dressing, then proceed to making a Lemak Laksa (Rich coconut laksa) and then use the versatile laksa paste to create another delicious dish Sayur Lodeh, a spiced coconut spiced vegetable dish. Audra Morrice is a cook, an author, a producer of her range of all natural gluten free products and a television presenter.
A graduate in Economics and Japanese, Audra left her very successful career in telecommunications to follow her passion in food. Her career in the culinary world began after her stint as a finalist in MasterChef Australia 2012. In 2015, she was one of the three judges on MasterChef Asia together with three-Michelin-starred chef Bruno Ménard and stellar restaurateur Susur Lee. Today she’s in her home town Singapore as host and judge of MasterChef Singapore 2018.
Audra has her own cooking series, Tasty Conversations, broadcasted on SBS Food Network in Australia, broadcasting on fyi across Asia, and tastyconversations.com.au.
She runs a catering business in Sydney for both private and corporate events and also hands-on cooking classes and corporate programs in Sydney and Singapore. Her cooking style is eclectically Asian, drawing influence from her Singaporean Chinese-Indian heritage.
Her cookbook "My Kitchen, Your Table" is currently available at all leading bookstores and online on Amazon and The Book Depository. Her range of all natural, gluten-free relishes, jam and mayo are available at selected retail outlets and online at pickettandplough.com.au.
She has also collaborated with Accor Plus offering members a personally guided food and cultural tour of Singapore getting right off the beaten track and visiting her favourite food haunts.
In March 2017, Audra consulted for Laguna Phuket to launch the very first Laguna Phuket Food and Music Festival. The success of the event attracted huge accolades from the governor of Phuket as well as the Tourism Authority of Thailand.
