Each week we plan to bring you something a little different from the last - and this week we've got the ultimate hangover cure which, with a little sleight of hand, can become a cracking poolside cocktail! Shared with some crunchy kale chips and your afternoon tipple is sorted!

HANGOVER CURE OR REFRESHING COCKTAIL?



COCONUT + MINT + lIME DELIGHT!


INGREDIENTS

Juice of 1 young coconut

1 Granny Smith apple

1 cup green grapes

½ lime

10 fresh mint leaves

 

METHOD

Add all ingredients blender - blend for 3 minutes until smooth.

Serve straight away or add a dash of gin for a soothing cocktail.

Cocktail or mocktail, the choice is yours!

CRUNCHY KALE CHIPS


INGREDIENTS

1 bunch (approx 250g) curly or black kale

2 tbs olive oil

½ tsp coarse sea salt

Cracked black pepper to taste

 

METHOD

Preheat oven to 150°c

Wash kale and drain well on absorbent paper or clean t-towel

Once dry, place leaves it a bowl and sprinkle with olive oil, sea salt and pepper.

Toss to coat evenly.

Arrange leaves in a single layer on baking paper. Bake, turning the leaves halfway through until golden and crispy (approx 20-25 minutes).

Serve with the aforementioned cocktail, and enjoy!
